Dessert Bar: Wedding Edition

On Saturday, our bride treated her guests with a full dessert bar from us. She had the reception at Cactus and Tropicals in Salt Lake City. Although we are on their preferred catering list, it was my first time at the venue- and boy it was beautiful! I loved the ambiance created by the plants, and the fresh smell was…well refreshing! Our bride went for a modern yellow and grey wedding and incorporated the chevron print (love it!)

She decided to play it sweet and serve a wide range of desserts. We served up three kinds of cookies: yellow sugar cookies, peanut butter cookies, and chocolate chip cookies;  three flavors of brownies: traditional, cookies ‘n’ cream, and mint; two types of gelato: salted caramel gelato and strawberry-peach; and topped it off with two drinks: a refreshing lemon-water and mango-pinapple Brazillian lemonade- a Savory original!

Quintero Wedding: Reception

Sarah, one of Chef Lou’s culinary school friends, had her wedding reception later that night. Throughout the night the room was filled with friends and family munching on delicious bites while catching up with each other. The room was gorgeous and so was the beautiful glowing bride.

The reception hall at the Fox Hollow Golf Course was a spacious and attractive room.

DIY Recipe: Peanut Butter Bars

 

Chef Lou loves to serve these delicious Peanut Butter bars for her box lunches. Her box lunches are a great fit for corporate meetings, trade shows, competitions, and many more events. Call today and have your next function catered by Savory!

 

Peanut Butter Bars

Lou Crandall, Savory Catering
makes one half-sheet pan (13″X18″) or approx 16 bars

Ingredients
1 cup (8 oz) butter
1 cup (7.2 oz) sugar
1 cup (7.3 oz) brown sugar
2 eggs (3.2 oz)
1 cup (8.6 oz) peanut butter
2 tsp vanilla
1 tsp baking soda
1/2 tsp salt
2 cups (8.5 oz) flour
2 cups (5.9 oz) quick-cooking oats

Directions
Cream butter and both sugars together in mixer until fluffy. Then add the eggs, peanut butter, and vanilla. Mix together. Then add the remaining ingredients. Mix only until moistened. Press mixture into a greased half-sheet pan (18″X13″) and bake at 350 degrees for approx 15-18 mins. Cook until bars are lightly browned. Be careful not to burn the cookie. Cool a little, then spread on chocolate icing while still warm. Wait until bars are a little cooler, then serve.

Chocolate Icing

Ingredients
1/2 cup (4 oz) butter
1/4 cup (.8 oz) regular cocoa powder
1 egg (1.8 oz)
1/3 cup (3.1 oz) peanut butter
1/3 cup (2.8 oz) milk
1 tsp vanilla
3 2/3 cups (16 oz) powdered sugar

Directions
Melt together the butter and cocoa powder. Take off heat and slowly temper in 1 egg. Be careful to add the egg in a bit at a time otherwise you will cook the egg. Put that mixture into the mixer and add the remaining ingredients. Spread over bars while still warm.

 

Appetizers for the Super Bowl Hall of Fame

As the Ravens and 49ers battle it out this Sunday, fans at home will be well fed, thanks to our most recent cooking class.  We focused on creating delicious finger foods and appetizers sure to please any spectator.

Naturally, we started with dessert! We made a Chocolate Chip Panna Cotta

You always taste your foods in case changes need to be made. In this case, it was perfect.
 
An Andes Mint is a great garnish for this dish
You can also put Panna Cotta in different containers
 
Then we started on Crab Cakes.
 
  This is a great option for dipping! Try pairing it with Mae Ploy sauce (pictured here), sour cream, or other sauces

 Our favorite appetizer of the night was the Pork Crostini. Chef Lou made this up one day and now everybody wants to have a mouthful! We’ve served it at our wedding shows and it’s been a big hit!

 
 Our next finger food is sure to be a crowd pleaser: Twice Baked Potatoes.
After baking the potatoes once, scrape out the insides and briefly whip up to make the filling
  
We decided it was high time we had another dessert so we made some  
Raspberry Cheesecake Cookies
 Adding the raspberries to the cookie dough.
 These are so delicious right out of the oven!

 Our last appetizer is a Pizza Dip. This works best in a shallow pan and eaten with bread chunks, pita chips, or other cracker. This is perfect for those people that love to dip
